Will people know it's recording?

Yes. The notetaker appears in the participant list with a name, just like any other attendee — it never records invisibly.

Do I have to press record every time?

No. Once your calendar is connected, it joins scheduled Meet calls on its own. You can also trigger it manually with “Join now” for ad-hoc meetings.

Does it handle Portuguese calls?
